worlds of flavor international conference posterThis coming week four delegates from USDBC will head to the Culinary Institute of America’s (CIA) Worlds of Flavor (WOF) Conference and Festival. We’ve covered the event in previous newsletters but wanted to share the different bean and bean ingredient dishes that we will be showcasing to the chefs and foodservice professionals in attendance. During the Flavor Discovery welcome event, we will be serving a one bite Brazilian brigadeiro chocolate rum cake made with bean flour. At the Kitchen seminar, we will be preparing a white bean Feijoada with navy, great northern, and lima beans, and a black bean brownie. During the three different marketplace tastings we will serve; a kidney bean Iberico Pork Burger, pinto bean crab cakes, and bites of the other dishes prepared for the flavor discovery and kitchen workshop. All dishes will be made with bean flour and IQF (frozen) beans provided by USDBC members and affiliates. We are incredibly excited to showcase all of the ways beans can create ‘culinary disruption.’ We will also be providing information on how to enjoy a live webcast of the event if you are not attending.
